Rich Beef Goulash
2 Tbsp. olive oil
750grm gravy beef, trimmed and cut into cubes
2 garlic cloves crushed
200grm button mushrooms quartered
1 large red capsicum, cut into 2 cm pieces
2 Tbsp. plain flour
1 Tbsp. sweet paprika
1 Tbsp. smoked paprika
2 bay leaves
2 cups beef stock
400grm can diced tomatoes
1 Tbsp light sour cream (optional)
The HOW TO:
Preheat the oven to 165 degrees
Heat the oil in a heavy based saucepan and brown the beef 5-6 min and transfer to a bowl
Add onion, garlic, mushroom and capsicum to the ‘meat pan’ and cook 5 min or until onion has softened.
Add beef back to the pan
Add flour and paprika and cook stirring for 1 min, add bay leaves
Stir in stock and tomatoes and cook in the oven for 2 hrs
Stir in the sour cream if desired at the end
Serve and enjoy!!
